1) Finely chop the washed and dried spinach. Set aside.
2) In a bowl, mix the ricotta with salt, pepper, nutmeg, pecorino and scamorza.
3) Continue with 2 eggs until you obtain a creamy mixture.
4) Complete with spinach.
5) Line the cake pan with the puff pastry and trim the edges to create a 3 cm high border. Set aside the puff pastry scraps.
6) Prick the bottom with a fork and spread the filling.
7) Make 3 wells and pour an egg into each one.
8) Sprinkle with a little grated pecorino.
9) Roll out the pastry scraps to form a disc with a diameter slightly larger than the cake tin.
10) Cover the cake and make sure the edges adhere well.
11) Brush with a little melted butter and make 3 cuts about 5 cm long to let the steam generated during cooking escape.
12) Bake in a preheated oven at 200°C with fan assisted cooking for 40 minutes.
13) Once the cake is cooked, let it cool.
14) Serve warm or cold.
NB: The Easter pie can be prepared in advance and baked just before serving.
Enjoy your meal!
